What's for Dinner

01/20/2012 - Chicken Fajita & White Bean Chilli
(modified recipe/ original from Savory Spice Shop)

What you will need :
2 oz Fajita Seasoning (please see below)
1 tsp. dehydrated minced garlic       
2 cups chicken broth (stock)                 
2 tbsp. olive or vegetable oil   
3 lbs thinly sliced chicken breasts            
2  15 oz cans diced tomatoes           
1 bag of beans (hydrated)                      
2 tbsp lime juice (optional)

Fajita Seasoning:
Can be purchased at Savory Spice Shop

In a medium bowl, thoroughly mix spices and chicken broth and set aside. Lightly brown the chicken in your oil. After the chicken is browned add ½ of the seasoning/broth mixture - to get all the goodies. Then transfer your mixture to your crock pot. Add your tomatoes, beans and remaining broth mixture. Cook on low for 4-6 hours. Not needed but I like to top with a dollop of sour cream, cheddar cheese and freshly chopped cilantro from the garden.. 01/19/2012 - Crock pot (Blue Moon )Beef, mashed potatoes and peas (my kids love peas)

What you will need         - A roast (the amount your family needs)
                                      - 1 bottle of Blue Moon beer
                                      - House seasoning
                                      - One container of mushrooms

Season your roast to taste, lightly brown on all sides in a hot pan, remove the roast and place in your crock pot on low for 6-8 hours, add the Blue Moon and leave it sit for 4 hours. After 4 hours add the mushrooms sliced to your liking (mine are kinda thick)Let it sit for another 2 hours or so. When your family is ready to eat make your sides.
