01/20/2012 - Chicken Fajita & White Bean Chilli
(modified recipe/ original from Savory Spice Shop)
What you will need :
2 oz Fajita Seasoning (please see below)
1 tsp. dehydrated minced garlic
2 cups chicken broth (stock)
2 tbsp. olive or vegetable oil
3 lbs thinly sliced chicken breasts
2 15 oz cans diced tomatoes
1 bag of beans (hydrated)
2 tbsp lime juice (optional)
Fajita Seasoning:
Can be purchased at Savory Spice Shop
In a medium bowl, thoroughly mix spices and chicken broth and set aside.
Lightly brown the chicken in your oil. After the chicken is browned add
½ of the seasoning/broth mixture - to get all the goodies. Then
transfer your mixture to your crock pot. Add your tomatoes, beans and
remaining broth mixture. Cook on low for 4-6 hours. Not needed but I
like to top with a dollop of sour cream, cheddar cheese and freshly
chopped cilantro from the garden.. Hope you enjoy (thank you Savory
Spice Shop for another great family meal)
